Soft White Cake Recipe For Beginners
Today I am going to share my soft white cake recipe with you from scratch.
In my last post, I had talked about how cakes can differ from each other on the basis of ingredients used in them. It is amazing how the use of eggs and their components can cause so many differences in the cakes.

On the basis of using eggs, cakes can be broadly divided into three types. These are
- Basic vanilla cake,
- Yellow Cake,
- and White cake.
Whole eggs (whites and yolks both) are used in basic vanilla cakes, yellow cakes are made with only the yolks and white cakes with only the egg whites. There is traditionally also a difference in the frostings paired with these cakes. Just about any frosting that you can think of can be used with vanilla cakes and white. Yellow cakes are supposed to be frosted with chocolate buttercream or ganache.
Originally these cakes were considered to be a symbol of one's wealth and prosperity. These were the most common cakes baked for weddings of the rich. Refined white flour and sugar were traditionally expensive and affordable only to the rich. Thankfully we are gradually returning to whole and unprocessed foods. It's funny how humanity gets back to things it rejected some time ago.
Some people often say that 'white' cake is all about the color and not the flavor. A white cake is a vanilla cake at the end of the day. But there is more to a white cake than just the color. In this post, we will discuss how to get that perfect soft white cake recipe. You might think that a white cake is dry since it does not use the yolks which contain fat. This cake comes out very moist and soft. With the amount of butter and milk that is needed for making this cake and the airiness of the egg whites, the finished product is both light and dense at the same time. I don't know if it makes sense but it actually is. This cake beautifully pairs up with any colored frosting and I would say is the best cake to make if you are planning a colorful decoration on the outside.
Which Ingredient Makes Cake Soft?
To make the perfect white cake you need the best soft white cake recipe. Here it is the type of ingredient that you are using which is more important than the ingredient. For example, a white is best if it holds a structure but is soft at the same time. I always use cake flour for this cake. If you do not have that you make it yourself. For every hundred grams of all-purpose flour or maida, replace one tablespoon of it with the same amount of cornflour. The kind of butter that you use forthis cake is also important. Butters commonly available tend to be on the yellower side. Try to get whiter butter for this recipe. You can also use shortening or a flavorless oil for this recipe but the taste won't be as good. It is also better to use clear vanilla instead of the darker one to keep the batter light in color.
What Makes a Cake Moist and Fluffy?
Talking of the texture of the cake, it can depend a lot on the process in which egg whites are added. I like to beat them to stiff peaks and mix all the other ingredients but that is not necessary. The cake will be soft and fluffy even if you follow the common creaming method. I also add a little oil along with the milk in order to give the cake an extra soft melt in the mouthfeel. Method To Follow- For Classic White Cake Recipe
- Preheat your oven to 180°C. Grease and dust an 8" round cake pan.
- Mix the milk and oil and keep aside. You could also add the extracts in this. If you are not using almond extract, double the amount of vanilla extract in the recipe.
- Combine the flour and baking powder, sift and keep aside.
- Cream butter and sugar till light and fluffy.
- Add the egg whites one at a time and combine well before adding the next.
- Add a third of the flour mixture and continue mixing alternatingly with the milk mixture.
- Beat at high speed till everything is properly combined and the batter is light.
- Pour into the prepared pan and bake till a skewer inserted into the center of the cake comes out clean.
