Super Easy Vanilla Cake Recipe| Homemade Super Moist and Fluffy Vanilla Cake Recipe
In my last post, I had shared my easy vanilla cake recipe; which is, true to its name it is very easy to put together and tastes awesome. The only problem with this cake that I find is that it is not as rich or decadent as a cake should be. My kind of vanilla cake is one that has a burst of flavors, is sweet and dense and entices you to eat another piece after you have had one. I learned this super moist and fluffy vanilla cake recipe from my mother. She bakes the most delicious fluffy vanilla cakes on this planet.
I have eaten and baked this cake more times than I can count. This is the recipe that introduced me to the world of cakes. I was brought up in a small town that did not have any bakery outlets when we were young. Be it our birthdays or Christmas or New Year my sister and I were eating this cake all year round.

This cake derives its flavor from butter and vanilla. I recommend using the butter that you enjoy eating on your bread. I have always used the salted butter that is commonly available; that allows me to do away with adding salt to the batter. You can use unsalted butter if you want. My super moist vanilla cake recipe is super easy to put together. It is as easy as combining the same quantity of every ingredient. If you do not like cakes that are very buttery I would advise you to add at least 80
grams of butter for every 100 grams of flour. Trust me, the flavor of vanilla combined with that of butter is going to create magic inside your mouth. It is indeed that cake which will make you feel like the monarch of the land of clouds.
This cake is very good as a layered cake or as a dessert or an accompaniment with tea or coffee. Since this cake contains butter it can be easily frozen for later use. I like to use this recipe for any vanilla-flavored celebration cake that I make. The cake firms upon being frozen for an hour which makes it easy to handle. Slicing layers of this cake is truly a cakewalk. Another reason for which I love this super moist and fluffy vanilla cake recipe is that the batter takes on color very easily. Talking about the method for making the batter, you can do it in any way you feel like. It can be made by simply dumping everything into one bowl and mixing everything till combined or do it in steps. I personally always like to do it in steps. If I am making the cake in a hurry I start with the dry ingredients or else I follow the standard creaming method. This cake turns out equally yummy no matter which way you prepare the batter. I highly recommend using a hand mixer for this batter to
combine all the ingredients well and make it free of lumps.

Super Moist And Fluffy Vanilla Cake Recipe
Ingredients
Flour 200 gms
Butter 160 gms
Sugar 200 gms
Salt (if you are using unsalted butter) A pinch
Eggs 4
Milk ½ cup
Baking Powder 2 tsp
Vanilla Flavouring 2 tsp
Method
- Preheat your oven to 180°C. Grease and dust or line with parchment an 8" round cake pan.
- Combine the flour, salt (if using) and baking powder together and sift a couple of times.
- In a large mixing bowl add the butter and sugar and starting at the lowest speed of your mixer slowly build-up to the medium-high speed. The two should be very well combined before we move on to the other ingredients.
- Add the eggs one at a time. Make sure that the first egg is completely combined before you add the next one.
- Add the vanilla flavoring along with the last egg and beat at medium-high speed.
- Now add the milk and dry ingredients alternatingly. Take care to start and end with flour.
- Beat at medium speed till you do not find isolated stands of flour.
- Now taking a wooden or silicone spatula fold the batter a couple of times making sure to scrape the bottom of the bowl.
- Beat at the highest speed of your beater for about 15-20 seconds to make the batter fluffy.
- Pour into the prepared cake pan and bake for 35-40 minutes or till a skewer inserted into the cake comes out with a few moist crumbs.
