Puddings are my first choice on such days and I love them for everything they are. I have a favorite banana pudding recipe and I love it because of its simplicity of preparation, awesome taste and versatility. This banana pudding recipe is so easy that you can make it just about any time you feel like. The best part of it is that though this is a dessert, it is so wholesome and filling that you can eat it as a meal in itself.

Sinking into its creamy sweetness is such a wonderful feeling. This banana pudding recipe allows a lot of flexibility and customization. You can replace half of the milk with cream for a richer taste. Think about adding choco chips or strawberries for garnish or a nice rich caramel sauce for banoffee flavor.



Another thing I love about this pudding is that you can eat it warm and chilled. You can serve this quick banana pudding to unexpected guests as well as carry it to a potluck. It can be assembled in a large baking tray or in small deep bowls for individual servings.




Here I am going to share a basic banana pudding recipe from scratch. This recipe is inspired by Stephanie Jaworski's recipe. This recipe is really so versatile and
easy to multiply in quantities.



Banana Pudding Recipe


Ingredients


Large Ripe Bananas          4; cut into ¼ inch slices
Cornstarch                         2½  tbsp
Sugar                                 50+25 gms   
Salt                                     A pinch
Milk                                    500 ml     
Eggs                                  2 large
Butter                                1 tbsp
Vanilla Cookies                 10-15
Vanilla Flavouring               2 tsp



Instructions



  • In a large bowl combine the cornstarch, 50 grams sugar, salt, and eggs.

  • Whisk well to make sure that there are no lumps. Add half of the milk and whisk again and put aside.



  • Keep a fine strainer and bowl ready. 



  • Put the remaining and sugar milk on heat.

  • Remove the milk and sugar from heat just after it reaches a boil.



  • Add the hot sweetened milk to the milk and egg mixture whisking constantly to make not to cook the eggs. 



  • Strain the mixture to get rid of the lumps and traces of cooked eggs if any.



  • Pour the mixture into a heavy-bottomed saucepan and cook, stirring constantly, till the mixture reaches a mayonnaise-like consistency. 



  • Remove from heat and add the butter and vanilla flavoring. Pour through the strainer again if required.



  • To assemble the pudding: Line the bottom of the baking tray or the serving bowls with the vanilla cookies. 



  • Add a layer of banana slices. 



  • Pour a portion each into the serving bowls and half into the baking tray. 



  • Repeat. 



You can eat the pudding just like that or cover the pudding with plastic wrap to prevent a skin from forming on it and bring it to room temperature or chill it for a few hours before serving.
