The vanilla cake recipe is the first cake recipe that I learned from my mom. Being brought up in a small town has its own perks and we did not really have any bakeries in our town when we were kids. You just mix everything and the batter is ready. This is also a very food recipe for a layer cake. You can frost this with vanilla or chocolate buttercream or dark chocolate ganache or whipped cream or just about any frosting you can think of. This fluffy vanilla cake gets along with everyone! The name of the ingredient is nutmeg- yes you read that right. I came to know this by chance. I happened to accidentally mix nutmeg powder to the flour that I was using for making my easy vanilla cake and I fell in love with the aroma of the finished product. Vanilla and nutmeg combine to form a flavor that is beyond words and you can only feel it when you eat it.

Ingredients
Flour 200 gms
Sugar 200 gms
Eggs 4 large
Oil ¼ cup
Milk ½ cup
Salt A pinch
Baking Powder 2 tsp
Vanilla Essence 2 tsp
Nutmeg Powder ¼ tsp
Method
- Preheat your oven to 180°C. Grease and dust or line with parchment paper a 7" round cake pan.
- Shift into a mixing bowl the flour, sugar, salt, baking powder, and nutmeg powder to make it light and airy.
- In another bowl, add the rest of the ingredients and whisk the eggs a little to break them.

- Add the liquid to the dry ingredients and mix it all together with a whisk or a hand beater till it's just light and fluffy.
- Pour into the prepared cake tin and bake for 30-35 minutes or a skewer inserted into the cake comes out without any traces of wet batter.
- Leave on a cooling rack till you can touch the cake pan with bare hands and then take it out of the pan.
- Enjoy it warm or cooled to room temperature or decorate it the way you want.
Do try this vanilla cake recipe out, I am sure you are going to love it. You can substitute the oil with melted butter and also add nuts or dried fruits to your liking. The amount of nutmeg that I have mentioned will enhance the vanilla flavor. If you are baking this cake for the first time, my suggestion is that you stick to the specified amount. Nutmeg has a really strong flavor and the cake may not taste very good if it is overused. You can certainly adjust the amount to your taste on your next attempts.
