Today I am going to share my soft plain cake recipe with you. Desserts are not simply desserts for me. Dessert is food. I came up with this plain cake recipe when I started getting multiple cake orders in a week. It so happened that I had only a day to deliver each order. I always bake my cakes fresh for the orders. That is, if you want the cake tomorrow evening, I will start baking today morning, decorate it tomorrow morning and in the evening the cake is yours. So you see at those times I need a basic cake recipe that can be put together very quickly and also be flavored according to my needs. My soft plain cake recipe uses only a few basic ingredients that you always have in your kitchen. Flour, sugar, milk powder, oil, baking powder, baking soda, and vinegar are the key ingredients. It so happened last Christmas week that I had two birthday cake orders and several fruit cakes to deliver. One of the birthday cakes and a few fruit cakes had to be eggless. I did not have much time and wanted to bake multiple cakes at the same time. So I prepared the batter for the eggless cakes at one time and separated the quantity as I needed.

The soft plain cake recipe that I am going to share today is an eggless recipe. I personally do not like eggless cakes but I diligently make them for my clients. If you want to add eggs to this recipe you simply have to add four eggs and leave out the milk powder, vinegar and baking soda out and double the amount of baking powder. Also, if adding eggs, you will also have to add two teaspoons of vanilla essence to get rid of the eggy smell.

A very important aspect of this homemade plain cake recipe is the addition of the vinegar. It is added at the end and not along with the rest of the wet ingredients so that it reacts with the baking soda to form a fizz. The trick here is to pour the batter into the pan as soon as the vinegar is mixed.
Like I said earlier, this is a very basic and the easiest soft plain cake recipe which you can modify according to your needs. If you are planning to frost it then also you have all the flexibility in the world. This cake will taste good with any frosting that you can think of. I have once converted this recipe into a chocolate cake by replacing 40 grams of the flour with cocoa powder and forted it with rich chocolate buttercream. Ingredients
1. Flour 200 grams
2. Sugar 200 grams (powdered)
3. Milk Powder 2 tbsp
4. Oil ⅓ cup
5. Milk ½ cup
6. Baking Powder 1 tsp
7. Baking Soda ½ tsp
8. Vinegar 2 tsp
Method to Follow While Making Soft Plain Cake
3. Mix the oil and milk together and add to the flour mixture.
4. Mix all the ingredients with gentle folds till everything is just mixed.
5. Add the vinegar and mix it quickly.
6. Pour the batter into the prepared pan and bake till a skewer inserted into the center of the cake comes out clean.
